		<description>I have a great vegetarian cook book called How to Cook Everything Vegetarian by Mark Bittman. The book is divided into categories. The categories are salads, soups,eggs dairy and cheese, vegetables and fruits, pasta noodles and dumplings, grains, legumes, high protein foods, breads, pizzas, sandwiches and wraps, sauces, condiments, herbs and spices, and desserts. I love the book because there are so many different types of food in it, from french to thai. The book cost 35 dollars and it is from Borders&lt;br&gt;&lt;b&gt;References : &lt;/b&gt;&lt;br&gt;being the only vegetarian in my family for 5 years, and finally finding this cookbook that has food everyone loves</description>

		<description>Vegetable Lasagna
9 dried lasagna noodles
2 eggs, beaten
2 c cream style cottage cheese, drained
1 15 ounce carton ricotta cheese
2 t dried italian seasoning, crushed
2 c sliced fresh mushrooms
1 large onion, diced
4 cloves garlic, minced
2 T evoo 
2 T ap flour
1 1/4 c milk
1 10 ounce pkg frozen chopped spinach, thawed and well drained
1 10 ounce pkg frozen chopped broccoli, thawed and well drained
1 c shredded carrot
3/4 c shredded parmesan cheese {3 Ounces}
1 8 ounce pkg shredded mozzarella cheese {2 c}

Grease a 3 qt. rectangular baking dish; set aside. Cook noodles according to pkg. directions. Drain; set aside. In a bowl combine eggs, cottage cheese, ricotta cheese, and Italian seasoning; set aside. In a large skillet cook mushrooms, onion, and garlic in hot oil until tender. Stir in the flour and 1/2 to 1 t ground black pepper; add milk all at once. Cook and stir until slightly thickened and bubbly. Remove from heat. Stir in spinach, broccoli, carrot, and 1/2 c of the Parmesan cheese. In prepared baking dish layer 1/3 of the noodles, trimming or overlapping as necessary to fit. Spread with 1/3 of the cottage cheese mix, then 1/3 of the vegetable mixture. Sprinkle with 1/3 of the mozzarella cheese. Repeat layers twice. Sprinkle with remaining 1/4 c Parmesan cheese.
