In a search for a good low carb bread alternative that I can make easily without a bread machine, I found this great recipe by Jennifer Eloff (http://www.sweety.com/). It’s best toasted, but also makes a mean french toast as well. It holds up well to being dunked as well as holding your sandwich together.
Fast Cheesebread

1 cup ground almonds
2/3 cup gold flax meal
1/3 cup vital wheat gluten
1/3 cup vanilla whey protein
4 tsp baking powder
1 cup Shredded Cheddar cheese
1/4 cup butter
2 eggs
1/2 cup heavy cream/water mixture
Mix Dry ingredients together in large bowl. Cut in the butter. In a separate dish, beat eggs and then add the heavy cream mixture. Stir egg/cream mixture into the dry ingredients just until mixed. Scrape into 8×8 well-greased baking pan.
Cook at 350 for 35-45 minutes until inserted knife comes out clean.
Once done, let cool, and cut the bread into quarters. Each quarter is further cut into 3 slices.

Stay tuned, Jane… The next recipe video is going to show just how far I have come from my dislike of some vegetables. I personally don’t believe I actually liked what I made my wife for valentine’s day.

Good stuff once …
Good stuff once again. Thanks. I went from 240 to 170 doing low carb. Blood profile couldn’t have been better. I have slipped (a little more than a bit). I split the difference between 240 and 170 and need to get back into induction and exercise. That is really key. A little muscle goes a long way. Thanks again for the recipes.

Check out the Low Carb Recipe Help and Suggestions forum. One of the sticky’s is called “Homemade Low Carb Milk” by CarolynF. The recipe is pretty good and quite drinkable.

I doubt it on being acceptable replacement. You can try it.
As for being Induction legal, read the ingredient labels. I have never had the stuff, so I have no idea what they put on their ingredients label.

Great recipe!
Great recipe!
Jennifer had tried …
Jennifer had tried the loaf pan, and it didn’t turn out as well for her since it didn’t rise as much a normal yeast loaf would. The “slices” wouldn’t be as normal sized at that point.
As for your other suggestion, that could be better. I am not sure the cheese would be as incorporated that way though. It might end up being more like a cheese biscuit than bread. It’s definitely a thought though…
Sounds like a great …
Sounds like a great recipe but wouldn’t it be eaiser to cut the butter into the mixture and then add the cheese? Just a thought
. Also, have you ever tried this in a loaf pan?

Thanks for watching! I just was contemplating the jump to a real 1080p HD camcorder (Canon), but when I wasn’t selected for the 12 week Atkins Challenge, that was put on hold for awhile longer.
