In this video, Betty demonstrates how to make some spicy and showy Armadillo Eggs. These are hollowed out jalapeno peppers filled with sausage and a blend of Monterey Jack and Cheddar cheese. They are dipped in seasoned coating mix and baked to make a great appetizer.

Ingredients (for 12 half-eggs):

6 jalapeno peppers, washed and dried with paper towel
1/4 to 1/3 pound ground pork sausage
1/4 to1/2 cup finely shredded Monterey Jack cheese
12 small cubes sharp Cheddar cheese (about 3/8-inch on a side)
1/2 package (5.5-oz.) seasoned coating mix for pork
cooking oil spray

Cut off stem end of jalapenos. Then, cut in half lengthwise. Remove the pulp and seeds and discard. Mix 1/2 cup Monterey Jack cheese together with the ground pork sausage. Place about 1/12 of the sausage mixture into each pepper half. Dip stuffed sides of peppers in coating mix. Place, stuffed sides up, in an ovenproof baking dish that has been sprayed with cooking oil. Bake at 350 degrees for 25 minutes. Arrange on a serving platter, and serve with taco sauce, salsa, guacamole, pico de gallo, or any favorite spread or dip. Betty, I made these and my gang loved them. I avoided having to shift around the stuffing to make it even at the end by scoring the mixture in 3 parts then scoring those thirds in 4 parts. These are not too hot at all…just nice and spicy. Thanks, Betty.

Thanks! I actually tried this yesterday, but I used meatballs I had on hand because I wasn’t sure of the raw/cooked question (I cut the meatballs up fine) – - things still worked great and it was very tasty!

the seeds hold all of the heat so it wouldn’t be hot at all. I reccomend covering your hands if you are working with jalapenos tho, I was deseeding one and one got stuck under my nail and I got it out but my finger burned for a couple days no matter how much I clean under my nail, and if you breathe it in it will make you cough and sneeze, eek

Betty, these are awesome!

My nephew when he was 8, made these for me, while he was at camp. They were awesome beyond reason! There were only (if i remember) 2 different modifications he used, when he brought them to me.

- He added tomato sauce in the filling.
- He also used red and orange peppers, and added some of the seeds in the peepers as a garnish

Whatever the less, they were still awesome, and I have no doubt these are to. Best of wishes to you betty!
