Sue Mallick with Food City presents a fresh recipe for Dulce de Leche at Food City’s Cooking School. This episode accents a free program featured every Monday night at The Crown Point Shopping Center location on North Eastman Road in Kingsport, TN. See www.foodcity.com for complete recipe details.

Ingredients:
40 vanilla wafers; 1 1/4 cup cold fat free milk; 2 pkg sugar free white chocolate pudding mix; 1 tub sugar free whipped topping; 1/4 cup sugar free caramel ice cream topping

Chop 4 of the wafers and set aside, line a 9 x 5 loaf pan with foil, with ends of foil extending past the sides of the pan. Arrange 12 wafers in a single layer on bottom of pan and set aside. Pour milk into large bowl, add pudding mixes and beat with whisk until well blended. Stir in whipped topping. Spoon 1/3 of pudding mix over wafer in pan, top with 12 more wafers and 2 tbsp of caramel topping. Repeat layers, cover with remaining pudding mix. Sprinkle with chopped wafers, pressing in slightly. Freeze 4 hours or until firm.

It’s very obvious from watching the video that the chef does not eat sugar free foods. That much sugar free caramel/pudding, ect., is like eating a laxative. Not smart. Also, that particular brand of sugar free caramel sauce is VERY strong.
