Wanna enjoy a delectable treat without all the guilt – one that’s actually so healthy you could eat it for breakfast!? Then come join me and I’ll show you how to prepare a yummy, healthy, “raw food” version of coconut ice cream!
TOOLS:
- Food Processor (can substitute with a blender capable of grinding nuts OR coffee grinder)
- Freezer (or ice cream maker if you have one)
AJA’S COCONUT ICE CREAM RECIPE:
(yields 2 servings, approx. 400 calories/serving)
* Most of the following ingredients can be purchased at your local health food store
- 1/2 Cup Water (filtered if possible)
- 1/4 Cup Raw Cashews + 1/4 Cup Raw Macadamia Nuts OR 1/2 Cup Raw
Cashews
- 1/8 Cup Raw, Flaked Coconut
- 1/8 – 1/4 Cup Coconut Oil OR 1.5 Tbs Coconut Butter
- 3 Tbs. Coconut Sugar + Agave Nectar to taste (OR any sweetener of your
choice to taste)
- Pinch of Sea Salt
- Dash of Lime Juice
- 1 Tsp. Raw Chocolate/Cacao Nibs
DIRECTIONS:
Process/blend all ingredients in food processor/blender till smooth. Pour mixture into bowl and chill in the freezer from 3-5 hrs. (depending on freezer settings). IMPORTANT: Churn/stir the ice cream ever hour until completely frozen to break up the frozen layer that will form on the surface and ensure a homogeneous consistency. Serve and relish!!!
Hope you enjoy your guilt-free dessert – and remember, while the caloric content may seem “high” for a healthy treat, these are NOT empty calories. This dessert contains nutrition-packed calories that with energize, satisfy, and fill you up! It can be a meal in and of itself!

Yeah, at my heaviest I was 250 lbs, and like I said, I’m only 5′3”, so that’s not good
I have the stretch marks to prove it too, ugh. But yeah, I feel your frustration on dieting, hon…it’s agonizing. I just started to eat natural foods (and stopped counting calories!) and worked out regularly for a couple years – I regained my health
